One of my favorite (and one of the first) treats I decided to master under the gluten free and dairy free category was banana bread! I have made it over and over again experimenting to make the best banana bread. I'm pretty sure Jake is getting sick of having it! Can that even be possible?! I have finally figured out the perfect recipe and I am so excited to share this with you! I hope you enjoy it as much as I do! Xx HJW
1 1/8c Sugar
1/2c Coconut oil
2c Gluten Free Flour Blend
1tsp Baking Soda
2Tbsp Almond Milk
3 Very Ripe Mashed Bananas
Preheat oven to 350 degree
Mix Gluten free flour, baking soda, and salt in a medium sized bowl. Set aside for later.
Mix Egg, Sugar, and Coconut oil together until well combined
Combine wet and dry ingredients. It should be thick and dry
Add Milk, Vanilla, and Bananas
Grease bread pan and pour the batter into the pan until the pan is half full.
Bake for 50-60 minutes
Check occasionally until the knife comes out clean.
Let cool. Serve and enjoy!
